Ever since I tried York's Peppermint Patties in America, I have searched high and low for them. I had never realised how simple it was to make them myself until I stumbled across a blog with a homemade recipe and couldn't not make them! So here's what you need.
Ingredients
240grams Icing Sugar
20grams Softened Unsalted Butter
2 Tablespoons of Evaporated Milk
1/4 Teaspoon of Vegetable Oil
1/4 Teaspoon of Vanilla Extract
A few drops of Peppermint Extract
1/2 Block of Cooking Chocolate

What To Do
1. In a bowl, mix together the sugar, butter, milk, vegetable oil, vanilla and peppermint extract until they are combined and firm.
2. Refigerate this mixture for 60 minutes until the mixture has become even firmer and you are able to roll into balls.
3. Roll the mixture into one inch balls and then using your palm, press down and flatten.

4.Refigerate for another 60 minutes on a tray lightly dusted with icing sugar.
5. Once they are firm, melt the chocolate and dip the patties into it ensuring that they are completely covered.
6. Once covered in chocolate, put them back in the fridge until the chocolate hardens and you are able to lift them off the tray as a whole entity.
7. Enjoy!
See, it wasn't that hard was it! I didn't roll them the right size the first time and only managed to make six decent sized patties but you should be able to make more if you roll them right. I've kept mine in the fridge so that they don't melt but I'm sure they'd be fine stored in an air-tight container.
Next time, I'll have cupcakes, I swear :P
